Most supermarkets rarely stock veal kidneys. Ask a whole animal butcher to reserve them. French, Italian and other ethnic markets often carry them. Online meat shops sometimes ship them frozen.
Professional insight
Butchers judge veal kidneys by color, shine and smell. Whole kidneys in their suet keep best.
- Pale, light brown lobes signal young veal.
- Any ammonia smell means it is too old.
- Ask for the fat and membrane trimmed off.
- Buy whole and slice at home, not pre-chopped.

Storage
- Refrigerate at once at 40 F (4 C) or colder.
- Keep them in a sealed container on the lowest shelf.
- Freeze if you will not cook them within two days.
- Thaw in the fridge, never on the counter.
How to use it
- 1Peel off any membrane and trim the white core.
- 2Slice into lobes or thick pieces.
- 3Sear quickly in a hot pan with butter.
- 4Finish with a mustard, cream or wine sauce.
- 5Take off the heat as soon as they are cooked through.
Overcooked veal kidneys turn tough and rubbery. Cook them hot and fast, or braise them gently. Classic dishes include devilled kidneys and rognons de veau in mustard sauce.

- What should veal kidneys smell like?
- Clean and mild. Reject any kidney with a sharp or ammonia smell.
